About me!
I am a well rounded individual who thrives off learning new things and enjoys finding creative solutions in any part of my work. As a chef I have been able to flourish with my menu planning and show off my abilities in worldwide cuisine. Varying from Asian, French, British, Mediterranean and Caribbean; I love to help my guests take a culinary trip around the world of flavour.
I also enjoy helping out on deck, having grown up sailing on the Isle of Wight; I’ve been a lover of water sports since a young age and enjoy Sailing, Diving, paddlesports and windsurfing.
I currently am working in Malta with my partner James Brown on a 70ft sailing catamaran that we helped project manage whilst she was being built in La Rochelle, France. We then delivered her to the Med and completed a private-use summer and completed a winter season of charters in the Caribbean. These charters were around the Leeward Islands, usually from 7-14 days for up to 8 guests. I offer a varied menu based on local produce and availability of ingredients. My responsibilities include planning menus, provisioning and organising itineraries with the captain too. Alongside this I helped to manage our junior deckhand and stewardess and ensure their training in all manner of things including safety, guest relations, and high end service were kept in top Shape. This summer we completed another Private-use Summer with the owner onboard for over 6 weeks in both Croatia and around the Ionian islands of Greece.
We are now assisting with the Flag change from. Cayman to Maltese and working closely with a team of surveyors, engineers and electricians to ensure the flagging requirements are met for Transport Malta and ensure the flag is successfully changed.
